Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced onion, bell peppers, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.

Cook the Veal
Push the vegetables to one side of the skillet. Add the veal medallions and cook for about 3-4 minutes on each side until browned.

Add the Ham and Sauce
Add the sliced ham to the skillet. Pour in the white wine, canned diced tomatoes, and chicken broth. Stir well to combine all ingredients.

Simmer
Bring the mixture to a simmer. Season with salt and black pepper. Allow it to cook for about 15-20 minutes until the sauce thickens slightly.

Garnish with fresh parsley and serve hot with rice or bread.
