    Prepare the Marinade

    In a bowl, combine the minced garlic, Rioja wine, lemon juice, olive oil, salt, and black pepper. Whisk together until well mixed.

    Marinate the Pork Chops

    Place the center cut pork chops in a resealable plastic bag or a shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably overnight for better flavor.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Roast the Pork Chops

    Remove the pork chops from the marinade and place them on a baking sheet. Pour the remaining marinade over the chops. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C) and the chops are golden brown.

    Remove from the oven and let the pork chops rest for 5 minutes. Garnish with chopped fresh parsley and serve with your choice of sides.
