    Make the Bechamel Sauce

    In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and whisk together to form a roux. Cook for about 2-3 minutes until golden, then gradually add the milk while continuously whisking to avoid lumps. Cook until the sauce thickens, about 5-7 minutes. Season with salt, pepper, and nutmeg.

    Add Cheese and Egg Yolks

    Remove the sauce from heat and stir in the grated cheese until melted. Allow it to cool slightly before mixing in the egg yolks one at a time until well combined.

    Chill the Mixture

    Transfer the mixture to a shallow dish, cover with plastic wrap, and refrigerate for at least 2 hours or until firm.

    Form the Fritters

    Once chilled, scoop out portions of the mixture and roll them into small balls or logs. Set aside.

    Coat with Breadcrumbs

    Place the breadcrumbs in a shallow dish. Roll each fritter in the breadcrumbs to coat thoroughly.

    Fry the Fritters

    In a large pot or deep pan, heat the vegetable oil to 350°F (175°C). Fry the fritters in batches until golden brown, about 3-4 minutes per side. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

    Serve the croquetas warm, with a dipping sauce of your choice.
