Prepare the Shrimp

In a large pot, bring water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and transfer to a bowl of ice water to cool. Once cooled, drain again and set aside.

Make the Pickling Brine

In a saucepan, combine white vinegar, olive oil, minced garlic, bay leaves, black peppercorns, red pepper flakes, and salt. Bring the mixture to a simmer over medium heat, stirring occasionally until the salt dissolves.

Combine Ingredients

In a large jar or bowl, layer the cooked shrimp with fresh dill and lemon slices. Pour the hot pickling brine over the shrimp, ensuring they are fully submerged.

Pickling Process

Allow the shrimp to cool to room temperature, then cover and refrigerate for at least 24 hours before serving. For best flavor, let them pickle for up to 3 days.
