Soup Preparation

Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrot, and sauté for about 5 minutes until softened. Add the minced garlic and sauté for another minute until fragrant.

Cook the Squash

Add the cubed butternut squash to the pot and stir to combine. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for 20-25 minutes, or until the squash is tender.

Blend the Soup

Remove the pot from heat and use an immersion blender to purée the soup until smooth. Alternatively, you can transfer the soup in batches to a blender. Be careful with hot liquids!

Season the Soup

Stir in the salt, black pepper, nutmeg, and heavy cream if using. Adjust the seasoning to taste.

Serve

Ladle the soup into bowls and serve warm, garnished with a drizzle of olive oil or a sprinkle of nutmeg if desired.
