Prepare the Black Beans
In a small pot, heat the black beans over medium heat. Season with salt and pepper to taste and let simmer for about 5-7 minutes until warmed through.
Cook the Duck Confit
In a skillet, heat the duck confit over medium heat for about 5 minutes until warmed and slightly crispy. Remove and set aside.
Fry the Tortillas
In the same skillet, add a tablespoon of olive oil and fry the corn tortillas for about 1-2 minutes on each side until golden and crispy. Remove and set aside.
Assemble the Huevos Rancheros
On each tortilla, layer the black beans, duck confit, and a sunny side up duck egg. Drizzle with sovereign red mole and sprinkle with crumbled cotija cheese. Garnish with fresh cilantro and a squeeze of lime juice.
