For the Fried Chicken

Brine the Chicken
In a large bowl, whisk together buttermilk and hot sauce. Add chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare the Flour Mixture
In a separate bowl, combine flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Coat the Chicken
Remove chicken from buttermilk brine and let excess liquid drip off. Dredge each piece in the flour mixture, ensuring an even coating. Place coated chicken on a wire rack.

Fry the Chicken
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry chicken in batches until golden brown and cooked through, about 12-15 minutes per batch. Drain on paper towels.
For the Cheddar Cornbread Waffles

Mix Dry Ingredients
In a bowl, mix cornmeal, flour, baking powder, baking soda, salt, and sugar.

In another bowl, whisk together buttermilk, eggs, and melted butter.

Pour wet ingredients into dry ingredients and stir until just combined. Fold in cheddar cheese.

In a large bowl, combine cubed watermelon, chili powder, lime juice, and salt. Toss to coat.

In a small saucepan over medium heat, combine hot sauce, honey, and butter. Stir until melted and well combined.
