Preparation of Smoked St Louis Rubs

    Prepare the Rub

    Mix together brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper in a bowl.

    Apply the Rub

    Generously rub the mixture over the pork ribs. Wrap the ribs in plastic wrap and refrigerate for at least 1 hour, preferably overnight.

Cooking the Ribs

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C).

    Smoke the Ribs

    Place the ribs in the smoker and cook for about 4-6 hours or until the meat is tender and the internal temperature reaches 190°F (88°C).

    Baste with Mop Sauce

    During the last hour of cooking, combine the soy sauce, sesame oil, chopped green onions, rice vinegar, minced garlic, and grated ginger to make the mop sauce. Baste the ribs with the sauce every 30 minutes.

Preparing the Vinegar Slaw

    Mix the Slaw Ingredients

    In a large bowl, combine shredded green cabbage, shredded carrots, apple cider vinegar, sugar, salt, and black pepper. Toss to combine.

    Let the slaw sit for at least 30 minutes to allow the flavors to meld.
