Pork Filling

Method

Preparation

  1. 1

    Marinate the Pork

In a large bowl, mix the olive oil, minced garlic, chopped onion, cumin, smoked paprika, chili powder, salt, black pepper, and lime juice. Add the pork shoulder, making sure it is well coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

  2. 2

    Slow Roast the Pork

Preheat your oven to 300°F (150°C). Place the marinated pork shoulder in a roasting pan. Cover with foil and roast for about 4-5 hours, or until the pork is tender and easily shreds with a fork. Remove from the oven and let it rest for 20 minutes.

  3. 3

    Shred the Pork

Using two forks, shred the pork into bite-sized pieces. Mix it with the juices from the roasting pan.

  4. 4

    Assemble the Tacos

Warm your corn tortillas on a skillet. Fill each tortilla with the shredded pork, adding your preferred toppings such as diced onions, cilantro, avocado, and lime wedges.

  5. 5

    Serve

Serve the tacos warm with lime wedges on the side. Enjoy!
