    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Skillet

    Add 2 tablespoons of butter to a 10-inch cast-iron skillet and place it in the oven to melt.

    Mix Dry Ingredients

    In a large bowl, whisk together cornmeal, flour, baking powder, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together milk, eggs, and the melted butter (reserve the rest for later).

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in roasted corn, cheddar cheese, and diced jalapeño.

    Bake the Cornbread

    Carefully remove the hot skillet from the oven, and pour the batter into the skillet. Bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.

    Make Jalapeño-Honey Butter

    While the cornbread is baking, mix together softened butter, diced jalapeño, and honey in a small bowl. Adjust the amount of jalapeño to taste.

    Once the cornbread is done, let it cool slightly before slicing. Serve warm with jalapeño-honey butter.
