    Prepare the Filling

    In a large skillet, heat a tablespoon of oil over medium heat. Add the onion, bell pepper, celery, and garlic. Sauté until softened, about 5 minutes. Add the diced Andouille sausage and cook for another 3-4 minutes until browned. Then, add the shrimp and okra, cooking until the shrimp turn pink. Stir in the Cajun seasoning and cooked rice. Mix well and remove from heat to cool.

    Form the Croquettes

    Once the filling has cooled, mix in the beaten eggs. Use your hands to form the mixture into small patties or croquettes, about 2 inches in diameter. Roll each croquette in breadcrumbs to coat.

    Fry the Croquettes

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the croquettes in batches, frying until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

    Serve the shrimp gumbo croquettes hot, accompanied by spicy Cajun remoulade for dipping.
