Pulled Chicken BBQ Sandwich
Method
Preparation Steps
- 1
Cook the Chicken
In a slow cooker, add the chicken breasts and pour BBQ sauce over them. Cook on low for 6-8 hours or until the chicken is tender and easily shredded.
- 2
Prepare the Slaw
In a large bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well and refrigerate for at least 30 minutes.
- 3
Shred the Chicken
Once the chicken is cooked, remove it from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and mix with the BBQ sauce.
- 4
Assemble the Sandwiches
Toast the hamburger buns if desired. On each bun, pile on a generous amount of the pulled chicken, top with creamy slaw, and add a few bread and butter pickles.
- 5
Serve
Serve the pulled chicken BBQ sandwiches warm and enjoy!
