Coat the Tomatoes
Dip each tomato slice into the buttermilk and then dredge in the flour-cornmeal mixture, ensuring they are well-coated.

Fry the Tomatoes
In a large skillet, heat vegetable oil over medium heat. Fry the coated tomato slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Cook the Pork Belly
In another skillet, cook the applewood smoked pork belly slices over medium heat until crispy, about 4-5 minutes per side.

Assemble the Stacks
On a plate, layer fried green tomatoes, a slice of crispy pork belly, a dollop of pimento cheese, a spoonful of tomato jam, and frisée lettuce. Repeat the layers until all ingredients are used.
