Fried Green Tomato BLT Stacks

Method

Preparation Instructions

  1. 1

    Prepare the Green Tomatoes

Slice the green tomatoes into 1/4-inch thick slices. In a bowl, mix the flour, cornmeal, salt, and pepper.

  2. 2

    Coat the Tomatoes

Dip each tomato slice into the buttermilk and then dredge in the flour-cornmeal mixture, ensuring they are well-coated.

  3. 3

    Fry the Tomatoes

In a large skillet, heat vegetable oil over medium heat. Fry the coated tomato slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

  4. 4

    Cook the Pork Belly

In another skillet, cook the applewood smoked pork belly slices over medium heat until crispy, about 4-5 minutes per side.

  5. 5

    Assemble the Stacks

On a plate, layer fried green tomatoes, a slice of crispy pork belly, a dollop of pimento cheese, a spoonful of tomato jam, and frisée lettuce. Repeat the layers until all ingredients are used.

  6. 6

    Garnish

Drizzle with lemon juice and zest before serving.
