    In a bowl, mix mayonnaise, pickled green tomatoes, and lemon juice. Stir until well combined and set aside.

    Clean the oyster mushrooms and slice them into strips.

    In three separate bowls, prepare the flour (seasoned with salt, black pepper, and cayenne), beaten eggs, and cornmeal.

    Dip the sliced oyster mushrooms first in the flour, then in the beaten eggs, and finally coat them in cornmeal.
