    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Sauté Collard Greens

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped collard greens and sauté until wilted, about 5-7 minutes. Remove from heat and let cool slightly.

    Mix the Dip Ingredients

    In a large mixing bowl, combine the sautéed collard greens, artichoke hearts, pepperjack cheese, cream cheese, roasted garlic, mayonnaise, lemon juice, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Prepare the Topping

    In a small bowl, mix the crushed Ritz crackers with 1 tablespoon of olive oil until the crackers are coated.

    Assemble the Dip

    Transfer the dip mixture to a baking dish and spread evenly. Sprinkle the crushed Ritz cracker mixture on top.
