    In a medium saucepan, combine the short-grain rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.

    Add almond milk, sugar, cinnamon, vanilla extract, and a pinch of salt to the cooked rice. Stir well and cook over medium-low heat, stirring frequently, until the mixture thickens and becomes creamy, about 20-25 minutes.

    Caramelize the Pecans

    In a separate skillet over medium heat, toast the chopped pecans until fragrant, about 3-4 minutes. Add apricot marmalade and stir until the pecans are well-coated and the marmalade is slightly caramelized.

    Spoon the rice pudding into serving bowls and top with the caramelized pecans. Drizzle any remaining marmalade sauce over the top and serve warm.
