Prepare the Dough

Make the Dough
In a large bowl, mix together the flour, brown sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until a dough forms. Divide the dough into two halves, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Roll Out the Dough
On a floured surface, roll out one disk of dough to about 1/8 inch thick. Cut out circles using a 4-inch round cutter.

Fill the Pies
Place a tablespoon of strawberry rhubarb preserve in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative finish.
Fry the Hand Pies

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Hand Pies
Carefully place the hand pies in the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Serve the warm hand pies with a scoop of vanilla bean ice cream on the side.
