For the Red Eye Aioli

Prepare the Aioli
In a bowl, whisk together the mayonnaise, brewed coffee, minced garlic, lemon juice, salt, and black pepper until smooth and well combined. Adjust seasoning to taste. Cover and refrigerate for at least 30 minutes to let the flavors meld.
For the Hushpuppies

Mix Dry Ingredients
In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt. Mix well.

Combine Wet Ingredients
In another bowl, whisk together the chopped onion, buttermilk, and egg.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Fry the Hushpuppies
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drop spoonfuls of the batter into the hot oil, frying until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
