Marinade and Wings

Method

Preparation and Cooking

  1. 1

    Marinate the Chicken Wings

In a large bowl, toss the chicken wings with the BBQ rub until they are evenly coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

  2. 2

    Prepare the Grill

Soak the hickory wood chips in water for at least 30 minutes before grilling. Preheat your grill to medium-high heat.

  3. 3

    Set Up for Smoking

Place the soaked wood chips in a smoker box or wrap them in aluminum foil, creating a pouch with holes to allow smoke to escape. Place this on the grill.

  4. 4

    Grill the Chicken Wings

Place the marinated chicken wings on the grill, away from direct heat. Cover the grill and let them smoke for about 30-40 minutes, turning occasionally, until they are cooked through and have a nice smoky flavor.

  5. 5

    Finish and Serve

Once cooked, remove the wings from the grill and let them rest for a few minutes. Serve with pickled pineapple and jerk BBQ sauce on the side.
