    Clean the chicken and cut it in half. Pat dry and season generously with the house rub mixture.

    In a small bowl, mix together the smoked paprika, brown sugar, garlic powder, onion powder, black pepper, salt, and cayenne pepper.

    Apply the house rub evenly over the chicken halves, ensuring to coat all sides.

    Prepare the Smoker

    Soak the hickory wood chips in water for at least 30 minutes, then prepare your smoker according to the manufacturer's instructions.

    Place the chicken halves in the smoker and add the hickory wood chips. Smoke at 250°F (121°C) for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).
