Preparing the BBQ

    Prep the Meats

    Season the chicken, ribs, and brisket with salt and pepper. For the chicken, rub with your desired amount of BBQ sauce. Marinate for at least 1 hour.

    Make the BBQ Sauce

    In a bowl, mix together ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper.

    Cook the Meats

    Preheat the grill or smoker to medium heat. Grill the chicken for 30-40 minutes, turning occasionally until fully cooked. Cook the ribs for 2-3 hours until tender. Smoke the brisket for 6-8 hours at 225°F (107°C). Cook the sausage until browned and heated through.

    While the meats are cooking, prepare the potato salad and set out pickles. Toast the Texas Toast on the grill for 2-3 minutes until golden.

    On a large platter, arrange the BBQ chicken, St. Louis ribs, smoked beef brisket, and Andouille sausage. Serve with potato salad, pickles, and Texas toast on the side.
