Preparation and Smoking

Prepare the Brisket
Trim any excess fat from the brisket and rub the entire surface with salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Let it sit at room temperature for 30 minutes.

Marinate
In a bowl, mix Worcestershire sauce and beef broth. Place the brisket in a large resealable bag and pour the marinade over it. Seal the bag and refrigerate for 24 hours.

Prepare the Smoker
Preheat your smoker to 225°F (107°C) and add your choice of wood chips (hickory or oak work great).

Smoke the Brisket
Remove the brisket from the marinade and place it in the smoker. Smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

Once done, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.
