    Prepare the Brisket

    Trim excess fat from the brisket and rub the entire surface with salt, black pepper, garlic powder, onion powder, paprika, cayenne pepper, and brown sugar. Wrap tightly in plastic wrap and refrigerate for at least 12 hours, preferably overnight.

    Prepare the Smoker

    Soak the smoking wood in water for at least 30 minutes. Prepare your smoker according to the manufacturer's instructions and preheat to 225°F (107°C).

    Smoke the Brisket

    Remove the brisket from the refrigerator and allow it to come to room temperature for about 30 minutes. Place the brisket on the smoker and add the soaked wood to the heat source. Smoke for 12-14 hours, or until the internal temperature reaches 195°F (90°C).

    Rest the Brisket

    Once the brisket is done smoking, remove it from the smoker and wrap it in butcher paper or aluminum foil. Let it rest for at least 1 hour before slicing.

    Serve

    Slice the brisket against the grain and serve with your choice of two sides.
