Preparation

    Season the Fish

    Sprinkle both sides of the Dover sole fillets with salt and black pepper. Allow them to rest for about 10 minutes to absorb the seasoning.

    Dredge in Flour

    Spread the all-purpose flour on a plate. Dredge each fillet in the flour, shaking off any excess.

Cooking

    Heat the Pan

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until the butter is melted and foamy.

    Cook the Fish

    Add the dredged Dover sole fillets to the skillet. Cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set them aside on a warm plate.

    Make the Sauce

    In the same skillet, add the remaining 2 tablespoons of butter and the fresh lemon juice. Stir to combine and cook for an additional 1-2 minutes until the sauce is slightly thickened.

Serving

    Plate the Dish

    Place the cooked Dover sole fillets on serving plates and drizzle the lemon butter sauce over the top.

    Garnish

    Sprinkle fresh parsley over the fillets for garnish before serving.
