Coconut Shrimp Cooking Directions

1

Prepare the Shrimp

In a bowl, combine the salt, black pepper, and cayenne pepper. Toss the peeled and deveined shrimp in the mixture until evenly coated.

2

Set up Breading Station

Prepare three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of shredded coconut and panko breadcrumbs.

3

Bread the Shrimp

Dip each seasoned shrimp into the flour, shaking off excess. Next, dip into the beaten eggs, then coat with the coconut-panko mixture, pressing gently to adhere.

4

Heat the Oil

In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of the breading; it should sizzle immediately.

5

Fry the Shrimp

Carefully add the breaded shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

6

Drain and Serve

Once cooked, remove the shrimp from the oil and place on a plate lined with paper towels to drain excess oil. Serve hot with sweet chili sauce on the side.
