Prepare Glass Noodles
Soak the glass noodles in hot water for about 20 minutes or until they are soft. Drain and set aside.

Prepare Chicken
Cut the chicken breast into thin slices or bite-sized pieces.

Prepare Lemongrass
Trim the ends of the lemongrass stalks and gently crush them with the back of a knife to release their flavor.

Chop Herbs
Chop the cilantro and basil leaves roughly and set aside.

Chop Chili
Slice the red chili into thin rings, removing seeds if you prefer less heat.
Cooking the Soup

Cook Chicken
In a pot, bring the chicken broth to a boil. Add the sliced chicken and cook for about 5-7 minutes or until fully cooked.

Add Lemongrass and Chili
Add the crushed lemongrass and sliced chili to the pot. Let it simmer for 5 minutes to infuse the flavors.

Season the Soup
Stir in the fish sauce, lime juice, and salt. Taste and adjust seasoning as needed.

Add the soaked glass noodles to the soup and cook for an additional 2-3 minutes until heated through.
