Preparation of Roasted Rice Powder

Roast the Rice
In a dry skillet over medium heat, add the Jasmine rice. Toast the rice, stirring frequently, until it turns golden brown and fragrant, about 8-10 minutes. Allow it to cool.

Grind the Rice
Once cooled, transfer the toasted rice to a spice grinder or mortar and pestle. Grind it into a coarse powder and set aside.
Cooking the Protein

Cook the Minced Meat
In a skillet over medium-high heat, add the minced beef or chicken. Cook until browned and fully cooked through, about 5-7 minutes. Drain any excess fat and set aside to cool.
Combining Ingredients

Mix the Salad
In a large bowl, combine the cooked minced meat, roasted rice powder, finely chopped shallots, mint leaves, and cilantro leaves. Toss well to combine.

Prepare the Dressing
In a small bowl, whisk together the lime juice, fish sauce, chili flakes, and sugar until the sugar is dissolved.

Dress the Salad
Pour the dressing over the salad mixture and toss gently to ensure everything is evenly coated.

Serve the Laab in a bowl, garnished with additional mint and cilantro if desired, alongside lettuce leaves for wrapping.
