Preparation of Rice and Noodles

    Cook the White Rice

    In a pot, add 1 cup of white rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and water is absorbed. Fluff with a fork and set aside.

    Prepare the Noodles

    In a separate pot, boil water and add the Lao rice noodles. Cook for about 5-7 minutes until soft. Drain and rinse under cold water to stop the cooking process. Set aside.

Stir-fry

    Stir-fry the Vegetables and Tofu

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add julienned carrots, sliced bell peppers, shredded cabbage, and chopped green onions to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender but still crisp.

    Add Tofu and Seasoning

    Add the cubed tofu to the skillet, followed by soy sauce, salt, black pepper, and chili flakes. Stir to combine and cook for an additional 2-3 minutes.

    Mix in Noodles

    Finally, add the cooked Lao rice noodles to the skillet. Toss everything together gently, ensuring the noodles are coated in the sauce and heated through.

Serving

    Plate the Dish

    Serve the stir-fried noodles alongside the white rice. Garnish with additional green onions or sesame seeds if desired.
