Preparation of Tofu

    Press the Tofu

    Remove the tofu from its packaging, drain any excess liquid, and wrap it in a clean kitchen towel. Place a heavy object on top (like a skillet or a few books) for about 15-20 minutes to press out excess moisture.

    Cut the Tofu

    After pressing, unwrap the tofu and cut it into bite-sized cubes (about 1-inch pieces) for frying.

    Coat the Tofu

    Place the tofu cubes in a large bowl and sprinkle the cornstarch over them. Gently toss the tofu to coat each piece evenly with cornstarch.

Frying the Tofu

    Heat the Oil

    In a large frying pan or wok, heat the vegetable oil over medium-high heat until it shimmers and is hot but not smoking.

    Fry the Tofu

    Carefully add the coated tofu cubes to the hot oil in a single layer (you may need to do this in batches). Fry for about 5-7 minutes or until the tofu is golden brown and crispy on all sides. Use a slotted spoon to turn the tofu occasionally for even cooking.

    Drain the Tofu

    Once fried, remove the tofu from the oil using a slotted spoon and transfer it to a plate lined with paper towels to drain excess oil. Repeat with any remaining tofu.

Preparing the Sweet Chili Sauce

    Mix the Sauce

    In a small bowl, combine the sweet chili sauce, fresh lime juice, and chopped cilantro. Stir well to mix all the ingredients together.

    Serve the Tofu

    Arrange the crispy fried tofu on a serving platter and drizzle the sweet chili sauce over the top or serve it on the side for dipping.
