Broth Preparation
Roast the Bones
Preheat your oven to 450°F (230°C). Place the beef bones on a baking sheet and roast for about 30-40 minutes, turning occasionally, until browned.
Prepare the Broth
In a large pot, add the roasted bones and cover with 4 quarts of water. Bring to a boil over high heat, then reduce to a simmer.
Season the Broth
After simmering, stir in the fish sauce and salt to taste. Remove from heat and strain the broth through a fine mesh sieve to remove solids.
Noodle and Topping Preparation
Cook the Noodles
In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions, usually about 4-6 minutes. Drain and rinse under cold water to stop the cooking process.
Prepare the Beef
Thinly slice the beef against the grain. If desired, freeze the beef for about 30 minutes to make slicing easier.
Assemble the Pho
In serving bowls, place a portion of the cooked noodles. Top with raw beef slices. Pour hot broth over the noodles and beef to cook the beef slightly.
Garnish
Add fresh basil, bean sprouts, lime wedges, sliced jalapeño, and chopped green onions as garnishes.
