    Prepare the Roasted Garlic

    Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast them for 20-25 minutes until soft and caramelized. Allow to cool slightly, then squeeze the cloves from their skins.

    Combine Ingredients

    In a medium mixing bowl, combine the mixed olives, orange peel, roasted garlic, fresh rosemary, and red pepper flakes.

    Add Olive Oil

    Pour the extra virgin olive oil over the olive mixture, ensuring all ingredients are well coated.

    Marinate

    Cover the bowl with plastic wrap or transfer the mixture to a jar. Let it marinate at room temperature for at least 30 minutes, or up to 2 hours for more intense flavor.

    Before serving, taste and adjust seasoning with salt if needed. Serve warm or at room temperature as an appetizer.
