Panna Cotta Preparation
1. Bloom the Gelatin
In a small bowl, sprinkle gelatin over 3 tablespoons of cold water. Let it sit for about 5 minutes until it blooms.
2. Mix Cream and Sugar
In a saucepan, combine heavy cream, whole milk, and sugar. Heat over medium heat until sugar dissolves, but do not boil.
3. Add Gelatin and Flavor
Remove from heat and stir in the bloomed gelatin, vanilla extract, pistachio paste, and a pinch of salt until well combined.
4. Chill
Pour the mixture into serving glasses or molds and refrigerate for at least 4 hours or until set.
Cherry Granita Preparation
5. Blend Ingredients
In a blender, combine pitted cherries, sugar, water, and lemon juice. Blend until smooth.
6. Freeze
Pour the mixture into a shallow dish and freeze for about 2-3 hours, scraping with a fork every 30 minutes to create a granita texture.
Amaretti Streusel Preparation
7. Mix Streusel Ingredients
In a bowl, combine crushed amaretti cookies, melted butter, and sugar until crumbly.
8. Bake
Spread the mixture on a baking sheet and bake at 350°F (175°C) for about 10 minutes or until golden brown. Let cool.
