Preparing the Pizza
Make the Dough
In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
Knead the Dough
Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
Preheat Oven
Preheat your oven to 475°F (245°C) with a pizza stone or baking sheet inside.
Assemble the Pizza
Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer to a pizza peel or parchment paper. Spread the cheese mixture evenly over the base, then sprinkle the cooked pancetta on top.
Bake the Pizza
Transfer the pizza to the preheated oven and bake for 10-12 minutes until golden and crispy.
Add Duck Egg Yolks
Remove the pizza from the oven and immediately add the duck egg yolks on top. Let them cook slightly from the residual heat.
Garnish and Serve
Sprinkle with fresh parsley and additional black pepper before slicing and serving.
