Fougasse Dough

    Prepare the Dough

    In a large mixing bowl, combine the warm water and active dry yeast. Let it sit for about 5 minutes until frothy. Add the flour, salt, and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

    Add Roasted Garlic

    Once the dough has risen, punch it down and mix in the roasted garlic and fresh rosemary. Knead briefly to incorporate.

    Shape the Fougasse

    Divide the dough into two equal portions. Shape each portion into a flat oval about 1/2 inch thick. Using a sharp knife, make cuts in the dough to create a leaf shape.

    Second Rise

    Transfer the shaped fougasse to a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.

    Bake the Fougasse

    Preheat the oven to 425°F (220°C). Sprinkle the dough with sea salt and drizzle with the world's best olive oil. Bake for 20-25 minutes or until golden brown.

    Cool and Serve

    Remove from the oven and let cool slightly. Serve warm with additional olive oil for dipping.
