Prepare the Suckling Pig
Preheat your oven to 300°F (150°C). Clean the suckling pig thoroughly, removing any innards and excess fat. Pat it dry with paper towels.

Prepare the Baking Dish
Place the seasoned pig on a large roasting rack in a deep baking dish. Surround the pig with the San Marzano tomatoes, spreading them evenly around it.

Slow Roast
Cover the dish tightly with aluminum foil and place it in the preheated oven. Roast for about 6-8 hours, or until the meat is tender and pulls away from the bone easily.

Add Fresh Basil
In the last 30 minutes of cooking, remove the foil and sprinkle the fresh basil leaves over the tomatoes and pig. Continue roasting uncovered to allow the skin to crisp.

Serve
Once cooked, remove the suckling pig from the oven, let it rest for 15-20 minutes, then carve and serve with the roasted San Marzano tomatoes and basil.
