    Prepare Chicken

    Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness.

    Set Up Breading Station

    In three separate shallow bowls, place flour in the first bowl, beaten eggs in the second, and a mixture of bread crumbs and grated Parmigiano Reggiano in the third.

    Bread the Chicken

    Season the chicken with salt and pepper. Dip each piece first in flour, then in the beaten eggs, and finally in the bread crumb mixture, pressing gently to adhere.

    Fry the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Fry the breaded chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Cook Sunny Side Eggs

    In the same skillet, add a little more olive oil if needed, and fry the eggs sunny side up until the whites are set and the yolks are still runny.

    Place the crispy chicken cutlets on a plate, top each with a sunny side egg, and sprinkle with chopped parsley. Serve immediately.
