A tender chicken breast marinated in buttermilk, breaded with Cajun spices, deep fried and served on a toasted Kaiser with a spicy aioli and pickles.

Marinate the Chicken
In a bowl, combine the buttermilk and Cajun seasoning. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare for Frying
In a shallow dish, place the flour. In another bowl, beat the egg. Heat the oil in a deep skillet or fryer over medium-high heat.

Bread the Chicken
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour, then dip in the beaten egg, and finally return to the flour, pressing lightly to coat.

Fry the Chicken
Once the oil is hot, carefully place the breaded chicken breasts in the skillet. Fry for about 6-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Toast the Kaiser rolls lightly. Place a piece of fried chicken on each roll, top with pickles, and spread with spicy aioli (recipe follows). Serve immediately.
