    Prepare the Potatoes

    Peel and dice the russet potatoes, then boil them in salted water until fork-tender, about 15-20 minutes. Drain and mash until smooth.

    Mix the Filling

    In a large bowl, combine the mashed potatoes, shredded cheddar cheese, cooked sausage, salt, and pepper. Mix until well combined.

    Form the Croquettes

    Using your hands, take a portion of the mixture and shape it into small logs or balls. Repeat until all the mixture is shaped.

    Prepare for Frying

    Set up a breading station with the flour, beaten egg, and breadcrumbs. Dip each croquette in flour, then egg, and finally coat with breadcrumbs.

    Fry the Croquettes

    Heat oil in a deep pan over medium heat. Once hot, fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
