Prepare the Bacon Cream Cheese
In a bowl, mix the cream cheese with the crumbled bacon until well combined. Set aside.

Cook the Eggs
In a non-stick skillet, heat the olive oil over medium heat. Crack the eggs into the skillet and fry until the whites are set but the yolks are still runny. Season with salt and black pepper to taste.

Assemble the Sandwich
Slice the croissants in half. Spread a generous layer of the bacon cream cheese on each half. Layer the smoked salmon on the bottom half, followed by the fried egg, mixed greens, tomato slices, and red onion.

Complete the Sandwich
Top with the other half of the croissant and press down gently. Serve with a side of breakfast potatoes.
