Rosemary Chips Recipe

Prepare the Garlic Infused Olive Oil
In a small saucepan, gently heat the olive oil over low heat. Add the crushed garlic cloves and let them infuse for about 10 minutes, being careful not to burn the garlic. Remove from heat and set aside.

Season the Potatoes
In a large bowl, toss the potato slices with the fresh rosemary, salt, black pepper, and half of the garlic infused olive oil.

Fry the Chips
Heat a deep fryer or a large pot with oil to 350°F (175°C). Fry the potato slices in batches until golden brown and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.

Finish the Chips
Drizzle the remaining garlic infused olive oil over the fried chips. Crumble feta cheese and sprinkle grated Parmesan cheese on top while the chips are still warm.

Serve immediately while hot, garnished with extra rosemary if desired.
