    Prepare the Mushrooms

    Preheat your oven to 375°F (190°C). Clean and remove the stems from the portobello mushrooms and chop them finely. Slice shiitake and button mushrooms.

    Sauté the Filling

    In a skillet, heat olive oil over medium heat. Add minced garlic and chopped shallots, and sauté until fragrant, about 2 minutes. Add the chopped mushroom stems, shiitake, and button mushrooms. Cook until softened, about 5-7 minutes.

    Deglaze and Mix Cheeses

    Pour in the white wine and cook for another 2-3 minutes until the liquid is mostly evaporated. Remove from heat and stir in asiago, mozzarella, and gruyere cheeses until well combined. Season with salt and black pepper.

    Fill the Portobello Caps

    Place the portobello mushroom caps on a baking sheet, gill side up. Generously fill each cap with the mushroom mixture.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

    Remove from the oven and let cool slightly before serving. Serve warm with toasted bread points.
