Cooking Instructions

  1. 1

    Prepare the Beef Tenderloin

Preheat the grill to high heat. Season the beef tenderloin with olive oil, salt, black pepper, and fresh rosemary. Cut the tenderloin into bite-sized pieces (approximately 1 ounce each).

  2. 2

    Grill the Beef

Place the seasoned beef pieces on the grill and cook for about 3-4 minutes on each side for medium rare, or until desired doneness is reached. Remove from grill and let rest.

  3. 3

    Make the Port Wine Reduction

In a small saucepan, pour the port wine and bring it to a boil over medium heat. Reduce the heat to low and simmer until it has reduced to about half its volume, approximately 10-15 minutes. Remove from heat.

  4. 4

    Assemble the Dish

On a serving plate, arrange the grilled beef tenderloin pieces. Crumble the bleu cheese over the top of the beef. Drizzle the reduced port wine sauce over the beef and cheese.
