Instructions

  1. 1

    Prepare the Potatoes

Dice the potatoes into small cubes. Heat 1 tablespoon of olive oil in a skillet over medium heat, add the potatoes, season with salt and pepper, and cook until golden brown and tender, about 15-20 minutes. Stir occasionally.

  2. 2

    Cook the Steak

Season the strip steak with salt and pepper on both sides. In a separate skillet or grill pan, heat 1 tablespoon of olive oil over medium-high heat. Add the steak and cook for 4-5 minutes on each side for medium-rare or until desired doneness. Remove from heat and let it rest for a few minutes.

  3. 3

    Prepare the Scrambled Eggs

In a bowl, whisk together the eggs, milk, chopped basil, and salt. In a non-stick skillet, melt the butter over medium heat. Pour in the egg mixture and gently stir until the eggs are softly scrambled. Stir in the asiago cheese until melted and creamy.

  4. 4

    Assemble the Dish

On a plate, layer the seasoned breakfast potatoes, slice the rested steak, and top with the creamy basil and asiago scrambled eggs. Serve immediately.
