Prepare the Broth
In a large pot, combine the chicken broth, galangal slices, smashed lemongrass, and kaffir lime leaves. Bring to a gentle simmer over medium heat.

Add Mushrooms
Once the broth is simmering, add the sliced mushrooms and cook for about 5 minutes, or until they begin to soften.

Add Coconut Milk and Prawns
Stir in the coconut milk and bring back to a gentle simmer. Add the prawns and cook for about 3-5 minutes or until the prawns turn pink and are cooked through.

Season the Soup
Add fish sauce, lime juice, and chili paste (or fresh chili) to taste. Stir well to combine and adjust seasoning as needed.

Garnish and Serve
Remove from heat, discard the galangal, lemongrass, and kaffir lime leaves. Ladle the soup into bowls, garnish with fresh cilantro, and serve hot.
