Prepare Rice Noodles

Soak the rice noodles in warm water for about 30 minutes until softened. Drain and set aside.

Cook Tofu

Press the tofu to remove excess moisture, then cut it into cubes. Heat 1 tablespoon of oil in a large skillet over medium heat. Add the tofu and cook until golden brown on all sides. Remove from skillet and set aside.

Scramble Eggs

In the same skillet, add another tablespoon of oil and crack the eggs in. Scramble them until fully cooked and then remove from the skillet.

Stir-fry Ingredients

Add the remaining tablespoon of oil to the skillet. Add the soaked rice noodles, cooked tofu, scrambled eggs, chopped green onions, and bean sprouts. Stir-fry for about 3-5 minutes.

Add Sauce

In a small bowl, mix tamarind paste, soy sauce, sugar, and chili powder. Pour the sauce over the stir-fried ingredients and toss to combine. Cook for an additional 2 minutes.

Serve

Serve the Phad Thai hot, garnished with ground peanuts and lime wedges on the side.
