Cooking Instructions

  1. 1

    Prepare the Noodles

Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

  2. 2

    Make the Tamarind Sauce

In a small bowl, mix together tamarind paste, fish sauce, sugar, and chili powder. Adjust the seasoning to taste.

  3. 3

    Stir-fry the Tofu and Prawns

In a large skillet or wok, heat some oil over medium heat. Add the cubed tofu and cook until golden brown. Add the prawns and stir-fry until they turn pink.

  4. 4

    Add the Noodles and Sauce

Add the soaked noodles and the tamarind sauce to the skillet. Toss everything together for about 2-3 minutes until noodles are heated through and evenly coated.

  5. 5

    Cook the Eggs

Push the noodle mixture to one side of the skillet, crack the eggs into the empty side and scramble them until cooked. Mix them into the noodles.

  6. 6

    Finish with Vegetables

Add the chopped green onions and bean sprouts. Toss everything together for another minute, then remove from heat.

  7. 7

    Serve

Plate the Phad Thai and sprinkle with ground peanuts. Serve hot.
