    Prepare the Batter

    In a bowl, mix together the all-purpose flour, cornstarch, salt, and black pepper. Gradually add water until you have a smooth batter.

    Fry the Red Snapper

    Heat vegetable oil in a deep pan over medium-high heat. Dip the red snapper fillets into the batter, allowing excess to drip off. Fry in the hot oil until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

    Caramelize the Garlic

    In the same pan, add minced garlic and sauté until lightly caramelized. Be careful not to burn it.

    Sauté Vegetables

    Add the bamboo shoots, bell peppers, and snap peas to the pan. Stir-fry for 2-3 minutes until the vegetables are tender but still crisp.

    Add the Sauce

    Stir in the Thai red curry paste, mixing well with the vegetables. Add the kaffir lime leaves and fresh Thai basil, cooking for an additional minute.

    Combine and Serve

    Gently place the crispy red snapper on top of the sautéed vegetables and sauce. Serve immediately.
