Preparation

    Prepare the Pork

    Slice the pork belly into thin strips. Mince the garlic cloves and mix with black pepper and salt. Rub this mixture all over the pork strips and let marinate for at least 30 minutes.

    Prepare the Vegetables

    While the pork is marinating, rinse the bean sprouts and chop the green onions into small pieces.

Cooking

    Fry the Pork

    Heat vegetable oil in a deep skillet or wok over medium-high heat. Once the oil is hot, carefully add the marinated pork strips. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Sauté the Vegetables

    In the same skillet, add the bean sprouts and green onions. Stir-fry for 2-3 minutes until just wilted but still crunchy.

Serving

    Plate the Dish

    On a serving plate, create a bed of sautéed bean sprouts and green onions. Place the crispy pork on top and serve with a side of plum sauce.
