    Prepare the Chicken

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken breast and stir-fry until cooked through. Remove from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add another tablespoon of vegetable oil. Add the diced onion and minced garlic, and sauté for about 2 minutes until fragrant. Then, add the broccoli, snap peas, and corn. Stir-fry for another 3-4 minutes until the vegetables are tender yet crisp.

    Scramble the Eggs

    Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble them until fully cooked. Mix the eggs with the vegetables.

    Combine Ingredients

    Add the cooked chicken back into the skillet. Then, add the cooked jasmine rice, soy sauce, fish sauce, and black pepper. Stir everything together and cook for an additional 3-4 minutes until heated through.

    Serve

    Remove from heat, and garnish with sliced green onions. Serve hot.
