Preparation

Prepare the Batter

1. Mix the Ingredients

In a large bowl, combine all-purpose flour, rice flour, coconut milk, water, salt, turmeric powder, and vegetable oil. Whisk until smooth and let it rest for 30 minutes.

Prepare the Filling

2. Cook the Chicken

In a skillet over medium heat, sauté shallots and garlic until fragrant. Add ground chicken, fish sauce, sugar, and black pepper. Cook until the chicken is fully cooked. Remove from heat and let cool.

Cook the Cups

3. Heat the Pan

Preheat a non-stick mini muffin tin or tart pan in the oven at 375°F (190°C) for about 10 minutes.

4. Fill and Bake

Remove the pan from the oven and carefully pour a small amount of batter into each cup. Bake for 5 minutes, then add a spoonful of the chicken filling to each cup and cover with more batter. Bake for an additional 15 minutes or until golden brown.

Serve

5. Garnish and Enjoy

Remove the cups from the pan and let them cool slightly. Garnish with chopped cilantro and serve with plum sauce.
